A chocolate fountain is a device for serving chocolate fondue. Typical examples resemble a stepped cone, standing 2-4 feet tall with multiple tiers over a basin at the bottom. Chocolate is melted by heat from below, then vertically transported to the top of the fountain by a corkscrew auger. From there it flows over the tiers creating a chocolate "waterfall" in which tidbits like strawberry or marshmallows can be dipped.

Rich couverture chocolate which is high in cocoa butter is recommended to ensure consistent flow. If the cocoa butter content of the chocolate is too low, oil must be added instead. It is highly recommended that chocolate formulated for fountains be used to avoid the need for the addition of vegetable oil as this creates a slimy and gritty taste and texture to the chocolate. Most chocolate fountains are not capable of melting chocolate directly in the base. Therefore, chocolate is typically melted in a microwave or double boiler before pouring it into the fountain. The current worldwide craze of Chocolate Fountains, which have been promoted throughout traditional TV and product placement has led to many chocolate fountain rental companies. These companies supply chocolate fountains for events such as weddings, parties and bar mitzvahs. Many are also now offering chocolate to vegetarians.

Chocolate Fountains can be catagorized as commercial and personal chocolate fountains. Professional Commercial Chocolate Fountains range in size from 19" to 52" tall. These fountains are always made of completely stainless steel construction and are durable for the catering professional. Home Chocolate Fountains have become popular in the last few years. They are typically made of plastic and are dishwasher safe. The caveat to owning a personal chocolate fountain is the lack of durability as the plastic parts frequently break after a few uses. Home chocolate fountains hold a maximum of 6 pounds of chocolate, while professional chocolate fountains hold as much as 35 pounds of chocolate. chocolate fountains are often used at parties and special occasions, but are reasonably expensive to buy and run.
