Paolo De Castro (born 2 February 1958 in San Pietro Vernotico) is an Italian politician, and the current Italian Minister of Agriculture.

A professor at University of Bologna, De Castro was one of main the counseillors and advisors of Romano Prodi in both his experiences as Prime Minister of Italy and President of the European Commission. He also already served as Minister of Agriculture from 1996 to 1999, in the two cabinets of Massimo D'Alema.

De Castro is also a deputy, elected in the Olive Tree list in the 2006 election. Is a member of Democrats (Italy) .
