Chinese sausage is a dry, hard sausage usually made from pork meat and a high content of fat. It is normally smoked, sweet and seasoned and is used in stir-fry South-east Asian dishes. The most common Chinese sausage is called "lop chong" and are available in Chinese markets and meat shops.
